
Hello dear ones!!! Thank you for being patient with me. This is one of the reasons I do not promise to post recipes on a certain date because life happens and I want to share with you things from the soul, that otherwise would be looked over if one were to type in a rush and there’s no soul in the post.
I am someone who likes to learn cooking by watching others – whether it is in person cooking class or cooking videos- or by reading culinary magazines. Unfortunately, I didn’t feel this spark the last few weeks. I didn’t -and don’t feel- the creativity of cooking so I am taking a break. Especially since this is the time of Lent, I would like to focus my energy on Christ and not my stomach. During this time, I am focusing more of my energy on painting peace signs, not watching TV, listening to the Gospel readings (this is the exception to watching TV, as well as watching a new episode of “Attack on Titan” because it is a family thing we do to bond). I fast 365 days a year in relation to food according to the Church, but fasting from passions is something that I would like to get better at.

Everyday I post a picture of my painted peace sign along with reflection/homily/hymn of praise of the day from “Prologue of Ohrid” by St. Nikolai Velimirovich. I mention topics in relation to inspiration from the Gospel, the emotions I feel from the colors of the paint I used that day (in which I turn to the Gospel readings or “Prologue”), or what I am feeling (which also turn to the Bible for to express more deeply). Even if you are not Christian, there are beautiful messages to read for our soul.
Moving onto food, this is a great juice to have, especially when beets are in season!!!! I have been making this for about a year now. There’s no true recipe to making this except to make it how you like it. I use the beets, beet greens, lemon, apple, and greens that I have on hand; if working with dark/bitter greens, I like to add an extra apple (this is my own personal preference). If you like it sour, add lemon slices as needed or if you like it sweeter, like me, add apple slices as needed. I once made this recipe using 8 cups of beet greens, 4 cups of beets, 2 apples, 2 – 3 lemons, and 2 – 3 bunches of mixed greens (kale & collard); that dance of sour and sweetness on my tongue is my kinda jam! 😛
If you are someone who doesn’t like to eat or drink greens, this is a great juice that masks the taste of greens– simply adjust the sweet or sour taste according to your preference!!
Ingredients
6-7 small red Beets (or 3 medium size red beets)
4 bunches of beet greens (a bunch of greens taken from 1 beet each, so 4 beets = 4 bunches greens)
1 – 2 small lemons or 1 large lemon, can adjust per personal taste
1 – 2 apples, preferably Pink Lady or Fuji, adjust per personal taste
1 – 2 bunches of Greens of choice (preferably kale, spinach, collard, Swiss chard), as needed/preferred
1 – 2 small carrots, or 1 large carrot
Directions
Juice. Strain if preferred without the pulp. Pour in a glass or shot glass, as I like to enjoy my juices this way. Enjoy!
