These root babes are underestimated!
I consider celeriac to be a secret ingredient to my mom’s broth, as we call in Polish, rosolek.
I am getting ready to head back to church to prepare sandwiches for handing out tomorrow to those in need. As I am waiting for my husband to come back from his walk with our dogs, I decide to look through my “Vegetables Illustrated” cookbook to get an inspiration for Lenten recipes.
It lands on celery root. ❤
My mouth is watering as I read the preparations for sage-brown butter celery root puree. I see the variations section. Miso celery root puree. Double yum! Horseradish celery root puree with scallions! Yum yum yum! Another recipe was roasted celery root bites with chimichurri! I am losing my mind here…YUMMM!
I am supposed to minimize consuming horseradish because my gut is not in the right shape to have it. It contains organic compounds that contain sulphur and may worsen the sulfide gas production by the gut microbiome. I will have a few bites, if I can resist, and the rest will be for friends and family.
These recipes all call for butter in the preparation steps but it can be easily substituted with Miyoko’s butter, which is my personal preference. The roasted celery root with yogurt and sesame seeds will have to wait for the weekend and be veganized with Forager or vegan Skyr version yogurts.
I knew I should have bought celery root at the farmer’s market yesterday! They were much larger in size than what I find at Whole Foods.
If you don’t sound convinced, how about this health tip? Celeriac is an excellent source of vitamin K, and has fiber, vitamin C, phosphorus, and other minerals that are beneficial for bone health, digestion, and reducing inflammation! And good for blood sugar response!What’s not to love?
