Christ is Risen!
This is another summer drink that has become a recent favorite. To me it is like an upgrade to lemonade with its boost of health benefits from the ginger and coconut water. Not only is it refreshing from the coconut water but also great for the immune system. I like it on the sweet side so I added some maple syrup (which is what I had on hand). Another bonus to this drink is that it is quick to make. Healthy and easy to make?? YES!! If you’d like, try with seltzer to turn it into a spritzer.
Author’s note: With anti-inflammation and alkalizing properties, this drink is as functional as it is delicious. This is a crushed ice/smoothie blend and is slightly thinner in consistency than most smoothies.
Serves 1 / Makes 2 1/4 cups / (550 mL)
Ingredients
3 or 4 fresh sweet basil leaves
1-inch (2.5 cm) knob of fresh ginger, peeled
1/2 cup (125 mL) coconut water
1/4 cup (60 mL) freshly squeezed lemon juice
2 tbsp (30 mL) agave or coconut nectar (optional)
1 tbsp (15 mL) pure vanilla extract
About 3 cups (750 mL) ice cubes
Directions
In a blender, combine all the ingredients except the ice. Add ice to about 2 inches (5 cm) above the liquid line. Blend on high speed until smooth.
